  • 4 tablespoons softened butter
  • 1 garlic clove, finely grated

Method

  1. Heat grill to medium-high. Mix butter, garlic, parsley, and lemon zest.
  2. Place closed oysters cup-side down on the grill. Cover and cook until the shells open.
  3. Carefully remove the top shell, add a little herb butter, and return to the grill until bubbling. Discard any oyster that does not open.

Ingredients

  • 2 medium acorn squash, halved and seeded
  • 1 tablespoon olive oil, plus more for brushing
  • 1 small shallot, finely diced
  • 1 cup cooked quinoa
  • 1 cup finely chopped kale
  • 1/2 cup dried Oregon cranberries
  • 1/2 cup toasted Oregon hazelnuts, roughly chopped

Method

  • 1/3 cup toasted Oregon hazelnuts, chopped
  • 1 egg beaten with 1 teaspoon water

Method

  1. Heat oven to 400°F. Roll the crust into a 12-inch circle on parchment and place it on a baking sheet.
